So wait, are you saying these songs PLAY harder than you expected, or that they're just filed under the wrong tiers? If they play harder, then Im sorry to say, clearly they didn't "write all easy songs period." We have songs right here that aren't as easy as youre assuming they should be lol. The songs are accurately charted. The notes on the audio track are what you're playing. hmx charts the songs as they are. They generally dont add or take stuff away, except when they're putting together disc setlists. Overcharting on dlc is pretty rare, and there's always a huge stink raised over it on the rb forums when it happens. But there hasn't been a big outcry over these tracks. The tiering is funny, I'll give you that. 100,000 is not a devil tier drum track, no matter what hmx says. But that doesn't mean its easy either. Proficiency isn't an either/or thing.
Why would you think the studio versions would be tougher? That's never the case in music games. Compare the different versions of LTBR and Alive. The live versions are faster, there's more notes in general to play, the solos are longer and tougher. You could say the same thing about any of the live tracks. Even the Old 97s, who no one is ever going to call great musicians, have a way crazier live version of Timebomb than what they did in the studio. They play it really sloppy (which I think is what you're getting at with Kiss, that they're a sloppy live band since they're busy setting stuff on fire?), but that sloppiness actually makes the song harder because of the way gameplay is structured in rock band.
